National Blueberry Muffin Day is celebrated on July 11th in the United States. A rich, tasty blueberry muffin, in my opinion, is the ideal way to commemorate the occasion! There is nothing better than making a batch of delicious blueberry muffins for my family this weekend with these deep purple berries. Blueberry muffins are a family favourite.
If only we could get up at the crack of dawn to celebrate National Blueberry Muffin Day on Sunday! Blueberry muffins are one of my all-time favourite baked items to make at home, whether for breakfast or dessert. There’s nothing better than pulling a pan of hot, freshly baked blueberry muffins from the oven. A large mug of iced coffee and a blueberry muffin are two of my favourite things.

Delicious Homemade Blueberry Muffin Recipe
This is the best muffin recipe I’ve ever tried, and I’ve tried a lot of them. A few changes were made to the original recipe: I used vegetable oil instead of butter, half and half instead of milk, and self-raising flour instead of all-purpose flour. To make it taste even better, I threw in two teaspoons of fresh lemon juice. I’m confident in my abilities. It’s going to be fantastic!

Yield: 12 muffins
Ingredients
- 2 cups self-raising flour or all-purpose flour
- 1 cup fresh blueberries
- 1 cup sugar
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 2 eggs, room temperature
- 1/2 cup half and half, or any milk you prefer
- 1/3 cup vegetable oil or 1 stick unsalted butter, room temperature
- 1/4 teaspoon salt
- 2 teaspoons lemon juice
Instructions
- The oven should be preheated to 350 degrees Fahrenheit.
- Sugar and eggs are mixed in a large basin. Stir the mixture with a whisker until it is well blended.
- Toss in the vanilla extract and the half & half, vegetable oil, and lemon juice. Mix the ingredients.
- Stir in the flour and blend thoroughly.
- Toss the blueberries in a separate basin with a little flour. By mixing in some flour with the blueberries, you can prevent them from sinking to the bottom of your muffins.
- Stir in the blueberries after adding them to the mixture. Remove from consideration.
- Meanwhile, prepare a 12-cup muffin tin by lining it with parchment paper.
Fill each muffin cup two-thirds of the way full with batter. - Take out of the oven after 28 minutes and let cool for 5 minutes before serving.
- Allow the muffins to cool completely on a wire cooling rack.
- When served with iced coffee or tea, serve the blueberry muffin warm or at room temperature
